Bata is a meaty fish which does well in Indian fish curries. It carries a subtle flavour which is best enjoyed when simmered in a curry, however, it can also be fried with the mildest of seasoning: a dash of pepper and salt with some lemon juice. The head and tail are cleaned and trimmed, making it ready to cook and easy to eat.
